[pp:ugoira] implement storing "original" frames in archives (#6147)

… by using '"mode": "archive"'

- rename 'ffmpeg-demuxer' option to 'mode'
- add 'metadata' option
- add 'zip' as a possible `--ugoira` format

TODO: adjust file mtimes inside archives when 'mtime' is enabled
